- Take 360 Grams of Fish Fillet (I use Toothfish).
- You need 1 of Medium Onion, chopped.
- Prepare 3 Stalks of Celery Stick.
- Prepare 1 Litre of Chicken Stock/Broth.
- Use 2 Tbsp of Soy Sauce.
- Prepare 2 Tsp of Dry Sherry / Shaoxing Wine.
- Provide 3 Tbsp of Vegetable Oil.

- Clean and fillet the fish, then marinate with Soy Sauce, Shaoxing Wine, and 1 Tbsp Vegetable Oil, set aside in room temperature for 1 hour.

- Saute the onion together with celery stalks, and close the lid for about 5 minutes.
- Pour over the chicken broth into the pot, and the fish together with the marinate sauce.
