Steps to make Lemon Rice:
- Add salt and lemon juice in sliced onions. Mix well and keep aside..
- Heat oil in a pan or kadai on medium heat..
- Add peanuts and roast until they turned light golden brown..
- Add cashews in it and roast until light golden colour. Don't burn them..
- Remove peanuts and cashews on a plate..
- In the same pan add Split urad dal and saute until it turn golden brown..
- Add dried red chillies, green chillies, mustard seeds, asafoetida and curry leaves. Saute well..
- Now add sliced onions in it. Saute for one minute..
- Add turmeric powder in it. Stir well..
- Now add boiled rice in it. Mix well and cook for two minutes..
- Add coriander leaves, roasted peanuts and cashews in it. Mix well..
- It's ready. Serve hot..
