  4. Place the lamb in the roasting tin and smother with the ingredients making sure to thoroughly cover the meat..
  5. Place in the BBQ and roast it untill you reach an internal temprature of 60-66c for medium. Around 1 hour and 30 minutes at a temprature of 170c. I add a bit of smoking wood at this point to add extra flavour..
  6. Once done let the meat rest for 15 minutes to allow the juices to redistribute through the meat👌.
