The ingredients needed to make Nimki:

  1. Provide 1 cup of all-purpose flour/maida.
  2. Use 2 tbsp of oil for binding.
  3. Take As needed of oil for frying.
  4. Provide To taste of salt.
  5. Get 1 pinch of sugar.
  6. Get 1/2 tsp of ajwain/carom seeds.
  7. Provide 1/4 tsp of Kalonji(nigella seeds).
  8. Provide 2 tsp of ghee.
  9. Prepare 1/4 tsp of baking powder.

Instructions to make Nimki:

  1. Mix 2 tbsp oil in flour.Sprinkle baking powder,salt,pinch of sugar,ajwain,kalonji and mix all.Add water to knead it and make a tight dough.Cover and set aside for 10 minutes..
  2. Divide dough into lemon sized balls.Roll into thin round discs.Make a paste of ghee and little flour.Smear little paste in the disc and fold into half.Smear ghee paste again and fold into triangle.Press lightly.Prick the surface with a knife so that folds don't open..
  3. Heat oil and fry nimkis in low flame till crispy and brown in colour.Cool and store in airtight container.Serve as a snack with evening tea..
